    Wine is the most civilised thing in the world, said the writer Ernest Hemingway. And if he's right, then London was the most civilised place in the world a few days ago when it hosted the London International Wine Fair. Around 15,000 growers, winemakers, importers, vintners, sommeliers, owners of restaurants and bars, descended¹ on the ExCeL Centre in east London to sample more than 20,000 wines and to find out which wine is creating a stir right now and what will be the quaffing² trends of the future.
