When China opened up,Hong Ying moved abroad

中国改革开放后，红英移居国外

and became a successful food and fiction writer.

成了一名成功的美食家和小说家

She returned to Beijing ten years ago.

多年以后她回到北京

For dinner, we're cooking two dishes, starting with the chicken wings.

晚饭我们准备做两个菜，首先做的是鸡翅

Now, what I'm making here is just your sea salt and five spice powder.

我弄的这个实际上就是你们的海盐和五香粉

I think five spice is a great seasoning¹.

我觉得五香粉绝对是好东西

Just put it over the chicken wing.

把它洒在鸡翅上

It comes ready mixed and is a blend of cinnamon, cloves²,

先把调料混在一起，这种调料混合了肉桂，丁香

star anise, fennel and Sichuan peppercorns.

Then throw it in the oven, that's how simple it is.

The chicken needs to bake for 30 minutes.

To go with it and making a side dish from the staple³

of Beijing cooking, cabbage, which saw people through the hard times.

They think cabbage is a homage⁴ to Beijing.

I'm going to stir fry it with this lovely dried shrimp⁵.

I could smell it when I took it out.Yeah. How good this was.

Into the wok⁶ go some garlic,then the shrimp and the cabbage.

先往锅里放些大蒜，然后再把虾干和包菜倒进去

It's the smell of real Chinese cooking.

Now I usually add rice wine, but none at hand, I'm winging it.

通常我做的时候要加些米酒，但今天没有，我就随意了

Can I add a little bit of the gin?

I'm blanching⁷ the cucumber flowers we bought in the market

for a couple of minutes.

Then I give them a minute in the wok.

I've never used that before.

Hong Ying started cooking at 11 in the village commune kitchen.

红英11岁的时候就开始在公社的食堂做饭了

Each family was rationed⁸ just two kilos of rice a month.

She learned to make the most out of very little.

她只学会做很少的菜

1 seasoning
